  1. Rinse and scrub sweet potato and poke a few holes with a fork. Wrap the sweet potato in a damp paper towel and microwave on high for 6-8 minutes or until the potato is soft and tender.**
  2. While the potato is cooking, remove the skin from the avocado and cut into thin slices.
  3. Cook rice according to the package instructions.
  4. Cut open the potato and top with hummus, rice and sliced avocado. Enjoy!
Recipe Notes

*For the rice, I usedĀ Seeds of Change Quinoa and Brown Rice w/ Garlic. This is a perfect way to make delicious rice (and quinoa) in the microwave in just 90 seconds!
