Sweet potatoes are absolutely my favorite food, and I am so excited to share this amazing stuffed sweet potato recipe. With the deliciousness of a potato and the nutrition of a vegetable, sweet potatoes make a perfect lunch or dinner especially with the addition of hummus, rice, and avocado.

As the end of the semester approaches, things are starting to get a little crazy. When my schedule gets really busy, it can be difficult to get to the dining hall for every meal. Instead of just snacking all day, I like to be able to eat a substantial meal without having to leave my room. A stuffed sweet potato is the perfect meal to give me the energy to get through a busy day without feeling overly stuffed (hehe).

Since sweet potatoes are my favorite food and I eat them very regularly, I absolutely love having a Potato Express – Microwave Potato Cooker. You can use this potato bag for any potatoes and makes cooking them in the microwave incredibly fast and easy. I also used  Seeds of Change Quinoa and Brown Rice w/ Garlic for the rice in this recipe, which can be cooked in the microwave in just 90 seconds! Stuffed Sweet Potato
This stuffed sweet potato makes a healthy and delicious lunch or dinner that is super easy to make with just a microwave.

Instructions
  1. Rinse and scrub sweet potato and poke a few holes with a fork. Wrap the sweet potato in a damp paper towel and microwave on high for 6-8 minutes or until the potato is soft and tender.**
  2. While the potato is cooking, remove the skin from the avocado and cut into thin slices.
  3. Cook rice according to the package instructions.
  4. Cut open the potato and top with hummus, rice and sliced avocado. Enjoy!
Recipe Notes

*For the rice, I used Seeds of Change Quinoa and Brown Rice w/ Garlic. This is a perfect way to make delicious rice (and quinoa) in the microwave in just 90 seconds!
