Honey Crunch Granola

Making homemade granola is a lot easier than you think it is…and its DELICIOUS.

Granola is a great option for healthy snacks or breakfast. However, many store bought versions are less healthy than they seem because they pack in a lot of added sugar. By making it yourself, you can control exactly what goes into it so you can really feel good about what you’re eating.

There are a lot of different ways to make homemade granola and it allows you to get really creative. Here is my recipe for a very basic honey granola. Try pairing it with yogurt and fruit with my Greek Yogurt Parfait recipe. You can also eat it plain as quick and healthy snack!

Instructions
  1. Preheat oven to 350°. Microwave coconut oil for 30 seconds or until melted.
  2. In a large bowl, combine oats, melted coconut oil, honey cinnamon and vanilla.
  3. Spread the oats mixture onto a baking sheet, leaving the oats in a thick layer so they will cook into one big bar. It should be about 1/2" to 1" thick. Bake for 25-30 minutes or until golden brown.
  4. Remove from oven and allow the granola to cool completely before breaking it into chunks.
Recipe Notes

The granola will still be loose and won't seem crunchy when you first remove it from the oven. Just let it cool completely and it will harden into one big bar which can easily be broken into crunchy pieces of any size. It may be tempting to over cook it because it wont look like it will be crunchy but trust me, just let it cool and magic will happen.
